On the other hand, my Omnivore points out that as ingredients lists go, Spam has a simple and edible list...

"Spam is a combination of ham, pork, sugar, salt, water, potato starch and a 'hint' of sodium nitrate 'to help Spam keep its gorgeous pink color,' according to Hormel’s Web site for the product."

(Is it my imagination or in the NY Times getting snarkier in its old age?)
